In this interview with Daniel, the owner of SanChien, we get an insight into the restaurant's origins, its brand philosophy and its vision for the future.
Origins from a love of Japanese culture
The birth of San-Chan was no accident, but came from owner Daniel's deep passion for Japanese culture and cuisine. Owner Daniel says he loves Japanese street food, such as octopus barbecue, yakisoba and okonomiyaki, and wanted to bring these local delicacies to Taiwan so that more people could savor the original flavors of Japanese street food. This passion drove him to start his own business, which began with a small food truck and gradually grew into the restaurant he is now.
The origin and meaning of SanChien
The restaurant's name, SanChien, has a deep cultural background. In the beginning, owner Daniel and his partners named the restaurant SanChien, taking the word “San” from the Tao Te Ching, which says, “The Tao is born as one, the Tao is born as two, the Tao is born as two, the Tao is born as three, the Tao is born as three, and the Tao is born as all things”, which symbolizes infinite creativity and potential for growth. As the store grew, they decided to go by the name of “SanChien”, where “Yokocho” refers to the earliest name for okonomiyaki, meaning cheap and filling food. The combination of “san” and “yoshoku” symbolizes the concept of “SanChien-yoshoku”, which is a combination of Japanese tradition and innovation.
Affordable Japanese food and cultural exchange
Daniel, the owner of SanChien , hopes that the restaurant will not only provide good food, but also allow more people to enjoy authentic Japanese cuisine at affordable prices. He believes that Japanese food should not only be positioned as high-priced food, but that authentic street food should be integrated into Taiwan's culinary culture so that more people can enjoy it. Therefore, SanChien has always tried to maintain the high quality of ingredients and cuisine, while keeping prices low so that customers can savor authentic food in a more affordable way.
From Food Truck to Restaurant
The journey of SanChien Foods has been a challenging one. From the early days of the food truck operation to the eventual opening of a brick-and-mortar store, owner Daniel and his team have experienced many difficult moments. Due to the uncertainty of Taiwan's laws and regulations, food trucks were often cited, which made their business model unstable. Eventually, they decided to make the switch and opened a store in the Tunghai business district to build a stable customer base and business model. However, the restaurant was hit by an epidemic soon after its opening, and its turnover was once so low that they even had to rely on part-time jobs to maintain the operation of the store. Although this was a difficult experience, it made owner Daniel even more determined to continue running his favorite restaurant.
Business Philosophy and Future Prospects
Owner Daniel is very serious about his team and his cuisine, emphasizing the importance of creativity in a good atmosphere in order to consistently deliver high quality dishes. He believes that innovation in cuisine comes from the team's meeting of minds and constant experimentation, which is the key to maintaining the brand's core values. Looking to the future, owner Daniel hopes to build Three Cents Food into what he has in mind before considering expanding to other business districts or even franchising.
